When the ArcGIS Server map service which has a layer that utilizes group value symbology is added to the ArcGIS Online web map, changing the symbology of the unique values in the web map causes the web map legend to no longer respect the group value symbology settings by displaying all of the values separately in the legend.

Do not change the symbology in the web map. Set the symbology preferred to appear in ArcGIS Online in (.mxd) prior to publishing to ArcGIS Server.
