This is a designed behavior. The output raster include all pixels at which their centers are within the clip polygon. Since the input cell size is big, there are two ways if users want the output closer to the clipping polygon: 1) resample the input raster to a smaller cell size; 2) or enlarge the clipping boundary.重现步骤
