The display names of the ArcGIS Online hosted feature service fields are not retained as field aliases in ArcGIS Pro if the layer is shared as a web layer or as a web map from ArcGIS Pro to ArcGIS Online.

To edit a hosted feature service layer's display names for fields in ArcGIS Online and retain them as the field alias in ArcGIS Pro, zip the file geodatabase and add it as an item to ArcGIS Online instead of sharing directly from ArcGIS Pro as a web layer or web map.
