Instead of referring to the "Understanding GIS" workbook, which is not available, in the help topic 'Getting started using ArcGIS Desktop' refer to the book "Getting to Know ArcGIS Desktop, Second Edition Updated for ArcGIS 10" which is available and is more appropriate for getting started with ArcGIS Desktop.
