This is a known limitation as the HTML code does not take effect in the feature table if applied to a string field which uses coded value domains, while it takes effect in the feature table if applied to a plain string field.

解决办法

There is no workaround to HTML issues. Remove the HTML formatting to allow the chosen option to appear in the Data tab of the Survey123 for ArcGIS website.
