In ArcGIS Pro, the output generated by the interpolation tools does not honor the custom color scheme set under the Color Scheme section of the Raster and Imagery option.

• From the Symbology pane, click on the drop-down for Primary Symbology. 
• Select one among the drop-down [Stretch, Classify, Discrete Unique Value.]
• The color scheme changed to the desired color scheme that was set from the Raster and Imagery option
