The elevation surface in Pro does not necessarily show its true height at any particular point and this is a known limit. If viewing the DEM, the polygon, and the output in Desktop ArcScene product, where there's no 'mangling' of elevation surface display, the output displayed is correct. For example, the tip of the polygon shows its highest point at elevation 155.6587, where the underlying raster surface's pixel value is 156 at that cell. So the output is correct. Only the raster display in Pro is 'approximate' and not to be trusted as a reliable height measure.
