Given the listed workaround, this is not an item to be addressed in an upcoming release. Closing as known limitation.

In the Group categories, replace spaces with underscores.
While adding it as an item in the content, add a title with spaces.
On the Gallery card in ArcGIS Hub page, the title shows up with spaces, however, the filter within the group has the spaces replaced by underscores.
When selecting it, it redirects to the Category Gallery in ArcGIS Instant Apps, and shows the correct set of items added under this category.
