Changing the layer alias in ArcGIS Pro only accepts one character change at a time.

Add or remove one character at a time. This is, however, a rather tedious process, especially if one wants to make larger changes to the alias. Hence, when adding ten letters, means that one has to open and close the Feature Class properties ten times.

Helpful workaround: Copy and paste the value into the text box to successfully retain the value.
