The issue is not reproducible in ArcGIS Pro 2.8.解决办法
- After the Add Rasters To Mosaic Dataset tool completes, save the project again.
- Exit ArcGIS Pro.
- Reopen the project and add a new coded domain associated with the mosaic dataset.
