A feature layer joined to a table with hidden fields displays all the fields in the published map service using ArcGIS GIS Server 10.4, when the data is present in an SQL Server 2014 enterprise geodatabase.

This issue was fixed for ArcGIS Pro under BUG-000117216. Esri recommends moving to ArcGIS Pro publishing workflows if you encounter this issue with ArcMap.解决办法
