This is by design. The preset data view for the fields is 'Selected features', which only populates values when there is a selection. To get the count of the whole data, ensure 'Default view' is selected. When typing the curly bracket ({) in the expression, a selection can be made from the data. Use the top suggestion (not the selected features) and manually select the added feature.
