Based on ArcGIS Online documentation: https://doc.arcgis.com/en/arcgis-online/manage-data/manage-hosted-feature-layers.htm#ESRI_SECTION1_1D3A87A80E3E4CD2A71744715F1522FE "You must use the same source file type and schema when you overwrite a hosted feature layer." Overwrite meant to be only for changing data and not schema, whenever the service has to be changed to the schema, user has to use Admin API to add fields to a feature service layer, for instance: https://developers.arcgis.com/rest/services-reference/add-to-definition-feature-layer-.htm#example1
