Attempting to create bar charts from the Data Engineering menu using date/time data types will cause ArcGIS Pro to crash.

Solução Provisória

Don't use the Data Engineer to create the bar chart with date data types!

1. Right click the feature layer that contains fields with date data types.
2. Select Create Chart, then Bar Chart.
3. There will be no problems when selecting a date data type as the category.

The Bar Chart menu will open without a problem if you open it from Data Engineer using fields with non-time data types, and from there you can change the Category to one of the date fields.
