When unique value symbology is configured on a single field other than the subtype field, the subtype codes appear in ArcGIS Enterprise Map Viewer instead of the subtype descriptions.

In ArcGIS Pro, prior to publishing, set the subtype field as the single field for unique value symbology. Then, in ArcGIS Enterprise Map Viewer, update the symbology for the layer as desired.
