When a preset layer is shared to ArcGIS Online as a hosted scene layer, the legend in Scene Viewer displays the entire list of genus available with the Realistic Tree and Thematic Tree preset layers.

As a workaround users manually map the two tree species to the appropriate tree symbol (genus) in Pro (using a unique value symbol, see https://pro.arcgis.com/en/pro-app/help/mapping/layer-properties/unique-value.htm) or Scene Viewer (using 3D Types, see https://doc.arcgis.com/en/arcgis-online/create-maps/scene-style-points.htm#ESRI_SECTION1_3537554C57044B9DA1EEB22972BF73DD) if the user does not require more than two genus for the data.
