This capability was intentionally removed from ArcGIS Pro. In ArcMap, when you changed the "Extent", you were actually changing a property called "Area Of Interest". The extent of the geostatistical layer didn't actually change, only the visual area of the layer. This caused problems if the geostatistical layer was ever used in the Extent environment of a geoprocessing tool because it would actually honor the extent, not the area of interest. These inconsistencies were due to the fact that geostatistical layers were introduced before geoprocessing in ArcMap. At ArcGIS Pro, we had the opportunity to bring geostatistical layers into compliance with geoprocessing rules, and that is why this capability was removed. You have several options for changing the extent of a geostatistical layer in ArcGIS Pro. If you created the layer using a geoprocessing tool, you should rerun that tool and use the Extent environment to specify your desired extent. If you intend to export your geostatistical layer to a raster, then both GA Layer To Grid and GA Layer To Rasters support the extent environment, so you can set your desired extent during the export. If you created the layer using the Geostatistical Wizard, then use the Create Geostatistical Layer tool. Provide your layer as input, set your desired extent in the environments, then run the tool. A new geostatistical layer with the same properties will be created for the new extent.
