対処法
It is possible to add a field to a table from the Data Tab in the item page in ArcGIS Online in both the table and fields view as a workaround.
When accessing the Data tab via the Map Viewer (Properties > Information > Source Layer), the map needs to be reloaded for the new field to be included. Refreshing the table does not add the new field.
