The optional Coordinate System parameter defaults to projected coordinate system WGS 1984 Web Mercator (auxiliary sphere)/WKID 3857 when creating a feature dataset from the context menu.

Accessing tools from right-clicking the context menus often assists users by providing common default values. Accessing the Create Feature Dataset geoprocessing tool through the context menu defaults the coordinate system to WGS1984 in the same way the feature class wizard defaults feature classes to WGS1984. This is as designed.対処法
Open the Create Feature Dataset (Data Management) tool from the Geoprocessing pane.
