不具合
Publishing a layer with default values in the attribute table from ArcGIS Pro to ArcGIS Enterprise does not return the default values in templates.

対処法
Following the workaround posted in the community, it was possible to recover the template, so other values were assigned to the template and then return to the default values.

Redoing this in a project with several templates in use is unfeasible.
