Feature services built using a view from a non-geodatabase containing a join in SQL Server 2008 or 2012 cannot be edited. An UPDATE or INSERT statement is not sent from ArcGIS Server to SQL Server.

Remove the joins from the source view, and create an alternate standalone table from the source view.
