This behavior is by design. When publishing an image service, the users select which fields are available, and which fields are allowed to be used through the image service. After the service is published, these two properties are hard coded as part of the service properties, availableFields, and allowedFields. If the users wanted to sort the table based on the newly added fields, the "sortableFields" property needs to be adjusted too. Republish the service from ArcGIS Pro or add the newly added field's name to the properties mentioned above through service admin API.再現の手順
