Its a known limitation for now. It will be fixed once we move to JSAPI 4.x対処法
The workaround can either be done in ArcGIS Pro or in ArcGIS Online.1. In Pro, add a Text element and add the fields that you want in the popup. Remove the Fields element as that will be dropped when viewed in the portal map viewer; and would duplicate the data in the popup in ArcGIS Pro.<a href="http://pro.arcgis.com/en/pro-app/help/mapping/navigation/configure-pop-ups.htm" target="_blank">http://pro.arcgis.com/en/pro-app/help/mapping/navigation/configure-pop-ups.htm</a>2. In ArcGIS Online, open the hosted feature layer in ArcGIS > Configure Pop-up > Select ‘A custom attribute display’ and manually add the field as desired.再現の手順
