When viewing an inbox map in the Survey123 field app, polygons symbology appears as blue and filled in regardless of desired symbology when created from an existing service.

The Survey123 field app inbox and geopoint/geoshape/geotrace do not use custom symbology. Points, lines or polygons are drawn in a default color and does not read properties from web map or existing feature layer. This is expected and by design.
