When using the 'Calculate Geometry' tool, the geometry parameter ‘Area’ is absent for layers in some projections.

Web Mercator is an inappropriate projection to use for native area computation, so it is blocked in this tool, and the only option is a geodesic area calculation. In ArcGIS Pro 2.7, limitations are re-defined, but if the data is in GCS or Web Mercator the area is not valid. Other Mercator types are supported, but not Web Mercator.
