When editing ArcGIS Server feature services in ArcGIS Online, the new symbology set in the web map reverts to the symbology settings from ArcGIS Server.

Its a known limitation. The owner of the hosted FS can edit types and templates on the service itself, but the user can't do that to an ArcGIS server service. So while in editing mode it reverts back to what's save on the service

Solution de contournement

Republish the service with the desired symbology set in the map document.
