Bogue
When a new field is added in ArcMap to a feature class referenced by a map service, the new field does not appear in the map view and Collector for ArcGIS by default.

This is a known limitation and not a defect. Changes made to feature class schemas, such as adding a field, require republishing of the feature service that references the feature class. The fields are not visible because the service is not properly republished.Solution de contournement
