There is no option to remove the background color for text in the Information Lookup configurable template.

this is a limitation of the dojo rich text editor we are using. in addition to using the remove format button to remove all of the formatting for the selected text, you could click 'View HTML Source' and locate the span tag that stores the string you want to modify and then remove the styling for the backround. here is an example: The before HTML where the text is rendered in bold and italics with red for background color: this is text with a variety of formatting becomes this when the background color styling has been removed: this is text with a variety of formatting
