This issue is addressed in ArcGIS Pro 3.1. The Extract Values to Points tool creates a new feature class output. The 'Shape_Length' field is a managed field and is removed for the point dataset (the Copy Features tool does the same). The issue is when writing the new 'TEST' field that exists after the schema is changed, the values are not managed properly. Optionally, use the Extract Multi Values to Points tool that modifies the input features rather than creating a new input.Solution de contournement
In ArcGIS Pro 3.0.1, set the output to a shapefile to maintain the values.
