Bogue
The browse-window for the input data of the 'Define Projection' and 'Raster To Other Format' tools in ArcGIS Pro 2.8.x or 2.9.1 do not display .asc files when first opened.

Solution de contournement
- Re-open the browse-window.
- In the case of the Define Projection tool, change the data type from 'All Supported Types' to 'GeoDatasets'.
