Bogue
The Assign Default To Field tool in ArcGIS Pro expects a value that is part of the domain specified under the Fields view, even though the specified subtype has a different domain, and returns the ERROR 000800 error.

- When running the Assign Default To Field tool from the geoprocessing pane, check the check box for the relevant subtype under the Subtype parameter.
- Type in the preferred value in the Default Value parameter.
- Click Run, and the tool runs successfully.
