Text fields in a hosted feature layer cannot have domains added to the field if used for symbology and the template has been updated to match the symbology in ArcGIS Online.

Solution de contournement

• Remove the field from the symbology and update the template accordingly. The domain editing option becomes available as expected.
• If the above does not work, add a new field, transfer the data from the original field, and add a domain before using the new field for symbology.
