This behavior is no longer reproducible with the latest version of ArcGIS Business Analyst Web App. After deleting the web map (created in the new Map Viewer), the infographic is still able to display as expected, including the variable values in the table. For any issues experienced, please reach out to Esri Support Services for investigation.
