Schema changes made to an ArcGIS Online feature service are not reflected in ArcGIS Field Maps and ArcGIS Collector.

This is expected behavior in both ArcGIS Collector and ArcGIS Field Maps when adding a new field directly to the feature service item without updating and saving the corresponding web map's pop-up configuration to include the new field. This is also true when working with smart forms. After the new field has been added to the feature service, in order to include the field in the form, it must be updated through the ArcGIS Field Maps web application.
