Bogue
Running the LAS Dataset To Raster geoprocessing tool produces a clipped output when both the map and input LAS dataset use the NAD 1983 / UTM coordinate system, and the output coordinate system in the 'Environments' settings is set to WGS 1984 Web Mercator Auxiliary Sphere.

Set the map coordinate system to WGS_1984_Web_Mercator_Auxiliary_Sphere and specify the extent of the LAS dataset on the 'Environment' tab.
