Running the create_service() method in a Python script generates a different set of properties in ArcGIS Online as compared to Portal for ArcGIS.

This is a known issue. There are multiple factors for this, but the biggest is that in ArcGIS Enterprise, the backend database is postgresql, whereas it is not the case in ArcGIS Online. This leads to column names and index names being completely different. It is impossible to get identical results. Additionally, new features are constantly added in between ArcGIS Enterprise versions. A user has the ability to modify the service JSON to their preferences.
