Option to uncheck the gamma stretch does not appear in ArcGIS Pro as appears in ArcMap.

When gamma is 'turned off', the gamma used is 1.0. There is redundant to have a checkbox and the ability to set the gamma as 1.0. If the gamma is off, set gamma to 1.0 and has the same effect with less buttons or checkboxes. Use the reset button on the appearance tab to reset gamma to 1.0 in one click.Solution de contournement
In ArcGIS Pro, after calculating statistics, change the stretch to None and set the gamma to 1. The raster is not stretched.Étapes pour reproduire
