In ArcGIS Pro the color applied to the extruded features is used to define the color of the created multipatch.In the example presented the color of the feature is yellow. The material mode for the mesh symbol is set to multiply, meaning colors applied will be multiplied to the existing color. Choose "Replace" as Material mode if you want to change the color of the Replace to change the color.
