Mosaic to new raster tool does not build pyramids correctly for a one band image and loses detail at full extent.

Use the mosaic button on the Image analysis window. Export the temporary raster to a file geodatabse raster and rebuild the pyramids with the bilinear option. This workaround works in ArcGIS 10 SP5 and ArcGIS 10.1 SP1.Étapes pour reproduire
