This is expected behavior. When applying the Unique Value renderer to the data, when updating the labels for the individual values, the names of the feature templates within the web map also need to be made sure to be updated as well to reflect these same changes. In Collector for ArcGIS, when performing a new collection, the names of the templates listed for the unique values are derived from the feature templates within the web map. Here is a link to the ArcGIS Online documentation on how to manage feature templates.
