In the Calculate Geometry Attributes (Data Management) tool, the following inputs are not displayed in the Coordinate Format parameter drop-down list: GARS (Global Area Reference System), GEOREF (World Geographic Reference System), MGRS (Military Grid Reference System), USNG (United States National Grid), UTM (Universal Transverse Mercator), and 'UTM with no spaces'.
This is not a bug. The geometry property 'Point x- and y-coordinate notation' is the only property that allows selecting coordinate formats like GARS, GEOREF, MGRS, etc. This property is only available with point input features.
A two-step process can accomplish the end goal: by calculating the polygon centroid using one of the supported formats like DD, the Convert Coordinate Notation tool can be used to convert the centroid DD values into one of the coordinate notation formats like GARS, etc. An even more efficient workflow is to use the Calculate Field tool with this Python expression:
arcpy.PointGeometry(!Shape!.trueCentroid, !Shape!.spatialReference).toCoordString("GARS")
This expression creates a centroid PointGeometry object from the polygon's centroid point, then returns the GARS-formatted string using the toCoordString function. Refer to https://pro.arcgis.com/en/pro-app/latest/arcpy/classes/pointgeometry.htm for more information.
