In ArcGIS Pro, there is no option to select Interval Size for stretch symbology for rasters as in ArcMap.

This was a conscious decision in ArcGIS Pro, since the statistics often were incorrect for each class when simply using an interval size; the Stretch Type can only be properly preserved when using None stretch (which usually gave a black result). Therefore, the number of intervals made more sense and that can manually be edited for both value and label.
