Bogue
In ArcGIS Pro ModelBuilder, using a .lyrx template file for defining output data's default symbology creates a geodatabase feature class with symbology internally stored.

Analytical tools and custom model and script tools that apply a layer file to the output parameter store that layer file inside the data metadata, so when the dataset is added to a new map or copied to a new location, the same symbology and other layer file properties are maintained to aid in interpreting the analysis results. Use the Export Features tool to convert the feature class into a new feature class that no longer has the default symbology applied.
