Bogue
In ArcGIS Pro, a model created in ModelBuilder that uses the Excel To Table tool as input for another geoprocessing tool does not retain the field list as a parameter after the model is run as a tool for the first time.

Solution de contournement
The field name parameters can be typed in manually when the model is run as a tool, but this requires prior knowledge of the column headers in the input Excel sheet.
