Bogue
In ArcGIS Online, the 'All other values' default symbol of unique values symbology of a map published from ArcMap or ArcGIS Pro displays incorrectly for a hosted feature service and in Map Viewer.

The service URL renderer can be different from what is stored at the map and layer item levels. The renderer in the map overrides the item or service renderer; the layer item renderer overrides the service renderer.Solution de contournement
- Remove the All other values category before publish.
- Set a character marker symbol instead of the default simple marker symbol in All other values category.
- In the Item Details page of the hosted feature service, open the service in Map viewer by providing full editing control. (Item Details page of hosted feature service > Add to new map with full editing control)
