Bogue
If a mosaic dataset published as a map service to a Linux ArcGIS Server references images via Windows paths, the server does not appropriately change the paths to reference the corresponding Linux paths, causing the service to display as a checkerboard.

This is a known limitation. ArcGIS GIS Server is unable to modify the paths to a mosaic dataset.
