Color Ramp and Symbol Size selectors in the Multiple Attributes symbology pane revert the field selected upon re-entry to the window.

Solution de contournement

Reset the field value each time when opening either the Color Ramp or the Symbol Size window within the Symbology > Multiple Attributes settings.
