Calling the update() method to update a Map object's properties using the ArcGIS API for Python version 2.4 causes the layer within the map to lose its unique symbology.

Solution de contournement

The map.update doesn't corrupt the symbology when it is defined from an expression (if in that case the expression returns the same value of the field).
