Bogue
Both values get saved to the Data table when changing the answers of a submitted survey with relevant questions using ArcGIS Survey123 in Portal for ArcGIS 11.1 after it has been published from ArcGIS Survey123 Connect 3.18.

Solution de contournement
Remove the original value manually in the Data tab when in editor mode. However, this is a time-consuming process.
