Attribute values get replaced with symbology labels in ArcGIS Online when publishing the layer from ArcGIS Pro.

- Create a new field with the same data type in the attribute table of ArcGIS Pro. Click Calculate Field, then populate the field with the original field that is used in the symbology field.
- Publish the web layer.
- In the hosted feature layer, there will be two fields: one showing the label values and the other showing the attribute values that are correct.
- The field showing label values can be either ignored or deleted.
